Scotland The Bread is a collaborative project which aims to establish a flour and bread supply that is healthy, equitable, locally controlled and sustainable.Our organic heritage grain is milled in small batches on a UK-unique Zentrofan mill. This cyclone mill processes our whole grains into cool, ultra-fine wholemeal flour, while preserving their higher-than-ordinary nutrient levels.Our grains are chosen for their contribution to biodiversity and their higher than average nutritional content, and are grown for us by the Balcaskie Estate. We operate from our Unit at Bowhouse on the Balcaskie Estate, where the flour is bagged and labelled by hand. For more information about Scotland the Bread please have a look at our website.
